Classic comic book red headbands

Anytime during gameplay (even in the dojo practice mode) hold down the R2 trigger and press Triangle, X, Circle, Circle, X, Triangle, X, Circle, Circle, X.Now on the select your turtle screen you will see that you can toggle the red headbands on and off by pressing triangle

Mirage-style bandanas

Hold R2 and press Triangle, X, Circle(2), X, Triangle, X, Circle(2), X during game play. The auto save icon will appear at the bottom-left corner to confirm correct code entry. Press Triangle to toggle the headbands when selecting a character.
